Tom, if you drove OTR seven years ago, how long were you on the road? If you have much experience you should be able to back in from most reasonable set ups.
As for all the corrections, you're instructor probably has a certain way he needs to teach it, and that doesn't match your experience.

I did OTR in 2008 but drove a bus the past six years so Im back in school, I did really well on the skills test the first week, my driving instructor was insisting I do things differently, now I'm having problems with my off set right and my alley doc. We also have a couple people that are lacking so I'm not getting the time in the truck I would like, today was a not good as my instructor was setting me up wrong "to see if I could fix it?" I like anyone else new have a long way to go on my backing skills, but I'm not horrible either, pre trip is good my driving is good it's like the more I do the skills test with my instructor trying to correct me when I'm doing ok in the first place the worse I get any suggestions?
