I have had bear and it turned out great. With bear you have to cook it low and slow. With deer most people over cook it like they were cooking beef. Elk is awesome.

Pigs are super easy to raise and only take about 6 months to get to butcher weight. I have been finding old sows lately that people want to get rid of cheap. I feed them for 2 months then off to freezer camp. Talk about a HUGE pork chop and lots of ham, bacon, sausage and gigantic ham hocks. Can't make a good soup without ham hocks.

Don't do like a neighbor of mine did once. They had a hog butchered but did not tell them to cure the ham and bacon. They were disappointed because it all tasted like pork roast.. I got a good laugh out of that one.
