From my observations, you're a lot stronger, in mind, and character, than you give yourself credit for. You clearly have what it takes to make it, as a professional driver. You got this!

my school gave us a sheet with the various steps of the air brake test. It's pretty decent but I'm gonna re write it cause some parts are confusing and don't make sense. so I'm gonna write it and color code it as to have what you need to be saying in one color and what you are doing in another that way I can practice it and memorize it exactly as I will be doing during the exam. When I have mine finished I'll put it on here for others to look at and see if it's helpful to them.
The real PITA is when you're doing it in a truck that has stuff not working right. the truck I drove for school yesterday... cruise control doesn't work so I had to sit there and hold the accelerator down to build up pressure (I mean I didn't HAVE to but it would take longer), it built pressure slower, cut out wasn't at 125 and a bunch of other small issues... nothing that would make the truck un safe, just stuff that made the instruction sheet obsolete almost.
Always pay close attention whenever anyone else is doing the pre trip, it helps you learn by seeing it repeatedly and also seeing their mistakes.
During your test, using the cruise to run up the air pressure will probably fail you so why you would practice that way doesn't make sense on such a specific part of the test. You mention it not cutting out at 125 yet the range for the governor to kick is between 100-140. Not every truck will react the same way which is why it's important to fully understand the procedure and each step. Don't get used to the truck you're in because it'll most assuredly bite you in the ass. I knew people who screwed themselves by anticipating when the brake valves would pop out on the final step and they got so used to watching that gauge rather than watch and listen to the valves that they failed because they stopped fanning of the brakes, thinking the valves had popped. Don't over think this, don't try to make cheats for it and don't get too comfortable as you practice it. Learn it verbatim as required by your state and follow each step specifically as stated. Unless of course you want to test more than once.

I have a feeling you'll get through the test with no problems whatsoever.
When all else fails, YouTube it....and using the cruise control is fine or just ask whoever is giving the test can you assist with building the pressure back up.(worked for me when the cruise control didn't) but when in doubt, break YouTube out...I'm no pro but it worked for me. Just my opinion.
