I'd go with either the KW T680 or the Volvo 780 (workstation interior).
As someone that would be going homeless/full-time, interior ergonomics and comfort would be important.
If I were considering BUYING - those would be my 2 top choices.
Western Stars are nice - but there's a reason why they are more of an O/O truck and you don't see them as full fleet choices. They are considered "upscale". They're owned by Damlier (who owns freightshaker), so they're kinda like the Luxus to freightliners Toyota.

The main reason that you do not see them as a full fleet is that until the release of the 5700 they did not have an aero truck. They were more on the vocational side of things. You do see them in fleets but those fleets are normally dump of some kind either a dump truck or a belly dump/end dump. You also see them in heavy haul applications.

CR England has started using the western stars as well my company is right next door to one of there terminals/cdl schools and i see them in and out of there on a regular basis
A CDL is required to drive any of the following vehicles:
A facility where trucking companies operate out of, or their "home base" if you will. A lot of major companies have multiple terminals around the country which usually consist of the main office building, a drop lot for trailers, and sometimes a repair shop and wash facilities.
Get a Volvo if you can. You will not regret it. I drove a Volvo and it was luxurious. I drove and learned on a Freightliner cool truck. I now drive a KW and it is a very stable truck.
But can't beat the Volvo on creature comforts.

I kinda like the Lone Stars, however if I was footn the bill it would be a 10 speed 579 Pete. One thing to consider is a truck that can pull Van, Reefer , Flatbed, or may be even oil field equipment. My choice then would be KW 900.
Reefer:
A refrigerated trailer.
