What kind of online class? Are you talking about just a simple safety class from your company or an actual college class for a degree?
You would have the time, but Truck Stop WiFi is notorious for being sucky/slow. If you're serious, buy tethering from you cell phone company.
It will probably depend on the time commitment of the class as well as the type of driving you are doing and the company you are working for. Also keep in mind that mobile data can get expensive fast, so if the online class does video lectures or something of the like it may not be feasible.
Like Errol said, I think you would have the time, but you might want to wait at least a few months before trying it. The first few months can be pretty exhausting and it's challenging enough to deal with pickup and delivery deadlines without having to worry about class deadlines as well. But by all means go for it. If I can manage to afford it, I am going to do the same thing using my cell phone as a wifi hotspot for my computer.
I got a BS in psychology online while working 70-75 hours a week traveling in construction. I stayed in hotels so always had good WiFi. Most of my Internet usage was research and turning in assignments.
Time management is the biggest issue. Due to poor time management I had to stop a couple times in order to get an assignment turned in on time.
It is doable and very rewarding, but it takes much more work and discipline.
