Wonder what "to and from" would cause you to use US 50 through NV? Perhaps Sacramento or Reno to Denver and you wanted to avoid I-80 and Wyoming weather?
Plastic pipe from Cedar City, UT, to Reno / Sparks / Cali. Cut over to US 93 on a state highway, then north up to US 50, then west to Fernley. US 93 is a nice drive from north of Vegas to the Canadian border, though I've never done that whole stretch in one trip, but most of it during several different trips. US 95 from AZ to Canada is similarly great.
US 95 from Winnemucca, NV to Ontario, OR. Especially beautiful is the part that cuts into Idaho for a spell. I was stunned and wanted to stop the truck at least a dozen times. I actually saw a grey wolf on the side of the highway just before entering Oregon in Nevada.
Also, I-15 as it enters Utah from Arizona. Amazing.
Almost anywhere out west that's not in a city. If I had to pick just one, though, it would be I90 from Eastern Washington into western Montana. There is some beautiful country there. And the air smells amazing!
Anywhere not west Virginia
Texas. I grew up in San Antonio and plan to buy a house in Rockport, right on the coat l coast, sometime next year.

To echo Chickie (nice to see a recent post from you) I too favor driving in the more rural parts of PA and believe it or not the rural parts of NJ, which includes South Jersey and the North Western corner. Otherwise when I was OTR in pleasant weather, hands down I-40 through New Mexico and Arizona.
