The Westwood Cafe at Richland MO off I-44. You better be real hungry too. Reasonable prices, monstrous servings and all made from scratch.
I don't have any experience to speak of, but I just had breakfast at the TA in Barstow, CA. yesterday. The food was great, inexpensive, and they piled it on. It was called the Black Bear, or something like that. My trainer said it's new.
Midway Diner off I-78 in PA. Midway exit in Bechtel Township about 15 miles east of I-81 interchange. The cafeteria in Cabela's, Hamburg PA is decent.

Browns in benton arkansas. It's a big buffet that has tons of different stuff and it's pretty good. Yet hey also have a large gift shop that has 2 floors. It's kind of like the cracker barrel of the buffet world. Bit it's really good.
There is a pilot about 2 miles down the road, but there is an old gas station right next to the restaurant that you can park in and stay the night, or drive back down to the Pilot.
I ate there last night and their roast beef and gravy and their 3 cheese potatoes were very good.
Portillo's in Homewood. (Chicago) Park at the new Loves in South Holland, and take an Uber. (8-9 bucks)
The TA in York, Nebraska has the best damn prime rib buffet.
Browns is where we have our weekly company safety meals. If we are at the yard on Fridays we can hop the shuttle down and eat a free meal. And yes, their food is amazing!
There is a small truck stop called the Morgan Oil fuel stop (I believe) on US 59 in Nacodoches (or however you spell that) TX that has a BBQ place, CC's Smokehouse, two doors down. You talk about whoa! Some of the best BBQ we've ever had and WAY more than we could eat. With drinks, $20.
On US 270 in Seiling OK there's a place called Gore's travel plaza that has a little cafe inside with the BEST hand tossed pizza.
On I-40 in North Carolina is Nebo's truck stop with Drew's Diner next door. Good food and they have fried liver mush, a NC speciality, which I adore.
Definitely need to mention the Tiger Truck stop on I-10 in Louisiana. Real Cajun food! A bit pricey but absolutely worth it.

I always mention the Double Nickel on I-55 ex19... looks like a whole in the wall kind of place but it has parking and if you can't find a spot go next door to the Pilot and park... get the ribs!! They are the best I've ever had. Don't expect a place to sit and eat (whole in the wall remember)

CC's smokehouse is owned and operated by a friend of mine. Of course, Nacogdoches is my hometown. The Morgan Oil Fuel stop also has a grill inside which the locals come to for their really good cheeseburgers. I don't know if they still do this, but at one point on Tuesdays they would sell the cheeseburgers as "buy one get one free."
