It can probably be done for one class, but only if you are not required to log in at a specific time each day. Your schedule as a truck driver can be very erratic, at least that's how it is for any over the road driver.

OTR driving normally means you'll be hauling freight to various customers throughout your company's hauling region. It often entails being gone from home for two to three weeks at a time.
Agreed, it depends on how the class is set-up. Some just give you material to read and then take tests when you're ready and these would be the easiest to work in. Ones that require you to sit in on lectures via live webcam would be nearly impossible. Basically the more flexible it is for time the better chances it'll have for working out while driving.
