I'm reading a lot and have asked a few questions. Does anyone use a conduction type plate for cooking. I don't have one but saw ads and was wondering if one of those would work. The pan or skillet is all that is supposed to get hot. Isn't supposed to use much electricity.

Induction burners kick butt, stream jacket kettle ie electric thermos are good to. The wok idea is definitely one I'm going use. As for cleaning, soapy water, bleach spray, and paper towels is all ill need, and all the health department requires in a restaurant.

Yea induction! Crock pot of beans, pone of corn bread, and this mountain William, a happy, happy trucker. :)

Do the trucks have any type of ventilation fan in them for when you are cooking?

A/C and heater fans in the front and sleeper areas. Windows and side vents that can be opened. Nothing like an exhaust fan you would have in a bathroom or a kitchen, though.

I use a Ninja electric grill. But I also have a 3000w inverter. Cook steaks, burgers, etc. Accessories for stews, etc, baking, griddle, etc.

Also electric skillet, keurig, microwave.
