As OTR drivers do you use this equipment? Can it be the only one to use on the road? Any recipes or good links to low carb, simple dishes, with ingridients which can fit in a truck? Thanks
Love my instant pot but bit of an overkill for city drivers. This thing gets food to boiling pretty quickly:

Yes you can, do it all the time with mine.
Use a 1:1 ratio of rice and water. Bout 10 minutes for white rice, 25 minutes for brown.
I've to mix some olive oil, salt, pepper, dried minced garlic and onions into before adding the water and cooking.
Comes out separated and fluffy everytime
