I haven't read it, but I've heard about a book called "Convict Conditioning" that describes how to stay in great shape doing body-weight exercises only... no equipment required... and can be done in limited space... like a prison cell or truck sleeper.

You can get work outs anywhere, just look at the continental United States as your gym. I personally use jump rope and pushups situps. All those can be easily done anytime you stop. Stoping will be a issue. To maximize your money potential stoping the truck is usually counter productive. This will be a personal choice by you and dictated by the tolerence of your company. Winter can also be hard on your health. I have been up around the great lakes area a lot lately and find it hard to get a workout in 10° weather. Ran into some Canadian truckers in Milwaukee the other day, they were in T shirts while I had my parka, beenie and thermals on. So I guess im a whimpy Cali boy who can't handle a little snow lol. Back south now and 40° feels like summer to me, so I'm slowly acclimating.
