David, the key is to keep it chilled.
For bananas, I buy them when they're green. Nothing you can do about them spoiling prematurely but if you buy them green it'll give you an extra few days. I typically buy 1/2 batch of green and 1/2 batch of yellowish green. They sell them like 8 in a head, I break that apart and buy two smaller heads of bananas. If that makes sense.
Bell peppers, grapes, strawberries, tomatoes, and especially peaches all belong in a cooler. These will rot quickly if they're not kept in at least room temperature and remember it gets really hot inside the truck sometimes.
You just need to keep them chilled.

Think I may just invest in another cooler or fridge and use it for my frits and veggies..

Don't know if this will help in your situation, but when I go on road trips (I'm not a trucker YET!) I make smoothies in advance and freeze them in plastic cups or juice bottles, then keep them in a cooler with lots of ice. They will stay good as long as they don't thaw out too much.

I use an oversaw cooler. So keeping it frozenish is hard.
We use the Coleman 40 quart iceless cooler that is sold in almost all truck stops. Prefect for keeping things cold. We keep lunch meant and condiments in the cooler and nothing has every spoiled yet. So far stuff have lasted about the same amount of time as if it was in a real frig. Even had a few energy drinks freeze solid if I forgot and left them on the top shelf. Yes we have it standing up on its end like a real frig.
Here's an alternative to fresh fruit and veggies - V8. The low-sodium version is best. No need to refrigerate. You'll get your serving of veggies. Not the same as fresh, but serves its purpose.

I don't mind v8 but I prefer fresh so I can blend them and make juice without the extra additives...
Guy, I've got the same one except I bought it from Walmart.. Never thought to stand it on end..
Yeah, if you're going to be adding any extra beverage into the smoothie I would rather go with Bolthouse Farms. Not Naked, that's Coca-Cola company and has names in the ingredients list you cannot pronounce.
As for coolers, I prefer the Koolatron's. Just havent had any luck with cheap Colemans or Igloos.

how does one keep fruit and vegies fresh on the truck? Bananas, peaches, tomatoes and bell pepers seam to be the hardest to keep from going bad within 2 days...
I bought a NutriBullet so I could make smoothies and what not, but finding some of my supply is going quicker than I can do anything with it. Bought a batch of Bananas 2 days ago and they at the time where more green than yellow and now there yellow and brown... I prefer my banana with a little more yellow on though..
Wondering if I should start taking the time to dice em up and stick em in my cooler? I bough a ton of sealed containers.
