Eating on the road really shouldn't be much different. Proper dietary habits are not broken because your venue changes. I've thought about this too-and came to the realization that I can still eat balanced decent meals even on the road. Exercise becomes more of a challenge for sure-but you can modify your diet to compensate somewhat. When you stop to rest maybe knock out 20 min of cardio. Push ups, jumping jacks and squats are simple and give great bang for the buck. Maybe carry a set of dumb bells in the truck. Hand squeezers to use in the cab while driving. Thinking out loud mostly... :)
Its all about eating clean.... Get a fridge(I'm looking for one myself), microwave n don't spend much money on food at truck stops. Running shoes, elastic bands or kettle bells and\or dumbbells should be good to start a routine. Go on the cross fit website.... There's a lot of good workouts that only require some space. & stay motivated!!

Just becauase you can afford to eat out everyday doesnt mean you should.
